These are very simple recipes that taste and look like you spent hours in the kitchen. You can do the prep (slicing veggies, making the butter, etc.) in the morning and then it will take just about 1/2 hour of cooking and prep time before dinner, so you can spend more time enjoying each other. This is my menu for Saturday.
First Course:
Start with something simple that you don't have to cook at all by doing a Caprese Salad (goes really well with steak meal)
Sliced plum or roma tomatoes
Sliced fresh mozzarella (in the liquid not the hard kind you grate for pizza)
Fresh basil leaves (roll them up and cut into fine strips)
Fresh cracked pepper
Salt
Balsamic vinegar
Extra virgin olive oil
Put a layer of tomatoes, then cheese, then top with basil and drizzle oil and vinegar and sprinkle salt %26amp; pepper.

Main Course:
A good steak dinner with sauteed zucchini.
Use a good piece of meat first - ribeye is my favorite, also the more marbled the steak the better flavor. Do not use round or chuck. Let it sit 30 minutes before you cook it on the counter to get the ';chill'; out of the meat. Salt and pepper both sides. Cook about 4-5 minutes on each side to get a nice medium rare. Let sit for 10 minutes before you serve so the juices can redistribute. Put a slice of garlic-herb butter on top and let it melt. It does add a nice flavor that compliments the steak.
Here is how you make the butter:
8 tbsp. butter, softened
1 tsp. garlic, minced
2 tbsp. fresh parsley, finely chopped
1 tbsp. green onion, finely chopped
Salt
Pepper
Make sure your butter is very soft, so leave out for a few hours at room temperature. Do not microwave - you don't want melted butter just softened. Mix with all the ingredients. Put the mixture on a sheet of parchment paper, roll into a log, then freeze
Zucchini is really simple. I just slice zucchini in thin round slices. Put a little olive oil and saute until cooked through. Add a bit of garlic towards the end of cooking so it doesn't burn. Add salt and cracked pepper.

Dessert:
This is a really easy version of a great dessert - hardly no cooking at all.
Easy Creme Brulee
Buy some prepared vanilla pudding. Spoon into ramekens. Top each rameken with 1 heaping Tablespoonful of light brown sugar and make sure it evenly covers the top of the pudding. Place the ramekens underneath your broiler for 3-4 minutes, watching them carefully so they do not burn. When the sugar has completely melted and is bubbly, remove ramekens from the oven with mitts and serve immediately. Add some fresh fruit (strawberries, raspberries, blackberries, etc.) to garnish and dust with some powdered sugar.

CHUNKY CHICKEN CACCIATORE
Combine the following to coat chicken:
1/2 c. flour
1/2 tsp. garlic salt
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. paprika
1 chicken, cut in serving pieces, dredged in flour mixture
1/4 - 1/3 c. olive oil
2 medium yellow onions, sliced or chopped
1 green pepper, sliced or chopped
4-5 cloves garlic, sliced or crushed
2-3 medium tomatoes, chopped
2-3 celery ribs, sliced
2 8 oz. cans tomato sauce
1/2 tsp. oregano
1/4 tsp. pepper
1/2 tsp. garlic salt
1/2 tsp. salt
After chicken is coated with the flour mixture, brown in hot oil and add the remaining ingredients. Simmer together until the chicken is done.
If needed, use the left-over flour mixture to thicken the sauce.
Serve over hot cooked spaghetti or fettucine, with salad and garlic bread.
For a variation you can cut the chicken into bite sized pieces before you start.
WHITE BEAN SALAD
1/2 pound dried white beans
1 onion, chopped
3 to 5 cloves garlic
1 quart water
1 bay leaf
salt and pepper to taste
6-8 tablespoons freshly squeezed lemon juice
1/2 teaspoon cumin powder
2 tablespoons olive oil
1/4 teaspoon oregano
1/4 teaspoon basil
6 tablespoons cooking liquid from beans
4 spring onions
1/4 cup chopped fresh parsley
In a saucepan, soak the beans in 1 quart of water for three to four hours, then drain. Add onion, garlic, 1 quart of water, bay leaf, and oregano and basil.
Bring to boil, reduce heat to low, cover and simmer until beans are tender, approximately one hour. Do not add salt to the cooking water or the beans will take longer to cook.
To make dressing, combine lemon juice, cumin, salt and pepper, olive oil, and 6 tablespoons cooking liquid from the beans. Pour over beans and mix well. Refrigerate several hours.
Just before serving, chop spring onions, using both white and green parts, and add to salad.
Optional: Garnish with tomato wedges, marinated artichoke halves, and fresh basil leaves.
LEMON CRISPS
1 1/2 cups flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 cup butter
3/4 cup granulated sugar
1 egg, beaten
2 tsp. grated lemon rind
1 tbsp. lemon juice
Sift flour with salt and baking soda. In small bowl with mixer at medium speed, Cream butter with sugar; add egg and lemon rind. Beat well.
At low speed, beat in flour slowly, then add lemon juice.
Refrigerate for 1/2 hour. Meanwhile, heat oven to 375掳F. Grease two cookie sheets and shape cookie dough by tablespoonfuls into balls. Roll in granulated sugar until coated. Place two inches apart on cookie sheets. Using a fork, press down each ball until it is flat and round.
Bake 10-12 minutes or until light golden brown. Remove to rack, cool. Makes about 25 cookies.
Roast Lamb.
2.5kg Leg of lamb
1 Clove garlic, sliced
1T Rosemary
Lemon juice
Salt %26amp; black pepper
Preheat oven to 200C (400F)
Cut small slits in lamb and insert the garlic. Rub meat with rosemary and lemon juice and sprinkle with salt and pepper.
Place meat in roasting pan and roast, uncovered, for 20 minutes.
Reduce heat to 170C (340F) and roast for 20 minutes per pound.
Serve with minted pan gravy.

Crab legs would be great!! With melted butter. Or fondue!!! Have fun!
steaks marinated in some good flavor you like and then either cooked on a grill or broiler baked potatoes and salad and rolls for later dipped strawberries in chocolate
