Dinner recipes can be a one dish meal or an elaborate one if you are a person who likes to stuff your tummy with a variety of food in the last meal of the day. Try these simple and healthy dinner recipes which can be of help.
Spinach stuffed sole recipe 鈥?This is a very healthy recipe which includes fresh green vegetables like spinach with all the goodness of fish. For this you will need 陆 bunch fresh washed and chopped spinach, sliced fresh mushrooms, sole fillets or any other white fish, 1 tsp olive oil, 录 tsp crushed oregano leaves, 2 minced garlic cloves, 2 tbsp sherry and mozzarella cheese for garnish. Proceed by preheating the oven to 400 degree F and coat a baking dish with a non-stick cooking spray.
Take a pan heat olive oil and saut茅 the mushrooms until they are tender. Add spinach to this and cook for about a minute add garlic and oregano to it. Place the fish fillet on a board and spread this vegetable mixture evenly on each fillet. Roll each fillet tight around the mixture and place the seam side flat on the baking dish. Sprinkle sherry and grate mozzarella cheese to garnish the dish. Bake for 15-20 minutes or till the fish and cheese gets a light brown color. Serve hot with any bread of your choice.
Ginger-Poached Noodles Recipe
If you don't like picking around the ginger slices, tie them up loosely in a piece of cheesecloth. Also, I know that boiling pasta in a shallow pot of broth breaks rule #1 of pasta making - but it works out just fine in this case. I used dried noodles, but you can certainly use fresh noodles (use enough for 2-3 people).
4 cups vegetable broth
2 ounces fresh ginger, peeled and thinly sliced
8 ounces firm tofu, cut into small cubes
1-2 cups (half a bunch) of broccolini, broccoli, or baby broccoli - trimmed
4 ounces dried spinach noodles, soba, or noodles of your choice
1 - 2 tablespoons shoyu or soy sauce
1/4 cup fresh basil, shredded
scant 1/4 cup fresh mint, shredded
a squeeze of lime juice
crushed red pepper flakes (opt)
toasted sesame oil (opt)
Place the broth, ginger and tofu in a large saucepan and bring to a boil. Dial down the heat, and gently simmer for ten minutes or so. Remove (just) the tofu from the pan using a slotted spoon and set aside. Now add the broccolini to the simmering broth. Cook for just a minute, until bright, and remove from pan with fork. Add pasta to ginger broth and cook until done, stirring regularly. Remove pasta with fork, set aside, and pour out most of the broth and all of the ginger slices. Return the tofu, broccolini and noodles to the pot. Stir in the soy sauce, basil, mint, and a squeeze of lime juice. Finish with a couple pinches of crushed red pepper flakes. Taste and season to taste with salt, soy sauce, and perhaps a drop or two of toasted sesame oil.
Serves 2-3.

Every time I make this recipe, I am pleasantly surprised since the results far exceed the effort. This casserole is perfect for a simple family meal, but also hearty enough to serve guests. This is fast comfort food that is sure to please everyone at your table.
Tip: Just add a tossed salad for a complete meal in a snap. Also, leftovers will freeze well.

Preparation Time: 20 minutes
Baking Time: 25 minutes RECIPE INGREDIENTS:
1/2 pound dried ziti
15 or 16 ounces ricotta cheese (part skim)
3 cups (or 12 ounces) shredded mozzarella cheese
3 cups (or a 26-ounce jar) spaghetti sauce
1/2 cup Parmesan cheese
1. Heat the oven to 350 degrees. Bring a large pot of salted water to boil and add the ziti. Cook until tender, about 8 minutes, drain the pasta.
2. Place the ziti in a large bowl. Mix with the ricotta and half of the mozzarella. Grease a 9 x 13-inch casserole dish. Spread half of the spaghetti sauce on the bottom of the pan. Add the ziti mixture and cover with the remaining sauce. Sprinkle with Parmesan and the remaining mozzarella.
3. Bake uncovered, for 20 to 30 minutes, until the casserole bubbles on the edges.
2 stalks celery chopped 2 beef bouillon
2 carrots chopped 1 lb portabella's sliced
fresh Italian parsle 2 14.5oz cans diced tomatoes basil,garlic,
1 onion chopped 2-8oz jars marinated artichokes'; drained
2-3 tbles oil 6 cans chopped clams drained
5 cloves garlic minced 2pts heavy cream
Fettuccine
Saute celery,carrots,parsley,and onion in oil.
Add garlic add the juice from 3 cans of the clams ';discard the juice from the other 3 cans.';
Add the bouillons, as they dissolve, add the portabellas, and tomatoes with juices,then add the artichokes.
Cook for 15 mins. Add the clams from the 6 cans, cook for 5 mins.
Slowly add the cream and allow the mixture to thicken.
serve over the pasta
Ingredients:

鈥?1/2 Cup chopped tomatoes
鈥?1/2 Cup cauliflower
鈥?1/3 Cup carrot chunks, cut Beans, shelled peas
鈥?1/2 Cup grated coconut
鈥?1/4 Cup mint leaves
鈥?1 tsp Chopped ginger, garlic
鈥?3 to 4 Green chilli
鈥?1/4 Cup cilantro
鈥?1/2 tsp Red chilli powder
鈥?2 Cups uncooked rice
鈥?Two 1 inch cinnamon sticks
鈥?4 Cardamon
鈥?6 Bay leaves
鈥?Garam masala accoding to taste
How to make Vegetable Pulav:
鈥?Soak the rice in water for ten minutes and then drain.
鈥?Take one tablespoon of oil in a pan.
鈥?When the oil is hot, add the rice to it and fry for some time.
鈥?Grind coconut, ginger, garlic, mint, cilantro, garam masala, green chilli and red chilli. powder with some water together.
鈥?Heat two tablespoon of oil in the cooker.
鈥?When it is hot, add some cummin seeds, cinnamon, cardamon and bay leaves.
鈥?Stir for a while and add chopped onions to it.
鈥?Stir the onion till it is golden brown.
鈥?Add the chopped tomatoes and ground paste.
鈥?Add the vegetables after frying for a minute.
鈥?Add rice and water then.
鈥?Cook in the cooker till two whistles.
I make this pasta as a side a lot. I love garlic!
Garlic pasta:
1 bulb crushed garlic (crushed in a mortar and pestle preferably)
1 pound bowtie pasta
1/4 cup olive oil or grapeseed oil
1/2 spanish onion (optional)
1/4 cup grated parmesan cheese
Dried chili flakes (optional)
Salt %26amp; pepper to taste

Boil pasta in heavily salted water according to package directions. Drain and set aside.
In a large heavy skillet, heat oil. Add onion, sautee until transparent. Add garlic and sautee until garlic is fragrant.
Add pasta to the pan, and toss to coat. Add chili flakes, salt and pepper to taste. Before serving (and while still hot), add parmesan cheese and toss.
