Make some Taco Boats and some Mexican rice on the side and maybe even some Quesidillas





For the Taco Boats I use Wonton Wraps. I pre-bake themin the oven in a muffin tin to form a bowl. Transfer them to a large cookie sheet as they bake. They come 60 to a package and I usually make 48 with two pounds of hamburger meat.





Brown your meat with one large sweet onion, you can even add corn to this. Drain and add two packages of Ranch Dressing Mix and stir in well. Spoon this into the cups and top with grated cheddar cheese. Place back in the oven to melt the cheese.





Toppings can range from sour cream, shredded lettuce, salsa of course and chopped tomatoes.





Easy Mexican Rice





This recipe cooks rice in chicken stock or broth and adds tomato, cilantro, onion, and cumin for color and flavor.





* 1 cup long grain rice


* 1 tablespoon vegetable oil


* 2 cups chicken stock (or water)


* 1/4 teaspoon ground cumin


* 1/2 teaspoon salt


* 1 clove garlic, minced


* 1/4 cup chopped onion


* 1/4 cup chopped cilantro


* 1 small tomato, chopped (about 1/4 cup)





Heat oil in heavy saucepan and cook rice over medium heat for 1 minute, stirring without browning the rice. Carefully add liquid and remaining ingredients and bring to a boil. Reduce heat to low, cover pot and continue cooking 15 to 20 minutes. Let sit for 5 minutes. Before serving, fluff rice mixture to mix all ingredients together.





Notes: This is a side dish that can be made often and goes with many main dishes.








Cheese Quesadillas





12 (5-inch) corn tortillas


1/2 pound Cheddar, Monterey Jack or Colby cheese, thinly sliced


4 tablespoons (1/2 stick) unsalted butter





Topping and Salsa:





1 pound vine-ripened tomatoes (about 2 tomatoes)


1/4 small red onion


2 to 3 tablespoons chopped fresh cilantro


Hot sauce such as chipotle or Mexican green chili sauce to taste (about 1/2 teaspoon)


Kosher salt


1 Hass avocado, halved, seeded, and sliced





Lay 6 tortillas on a work surface. Divide the cheese among the tortillas. (Its best to leave about an inch border on the edge of the tortilla uncovered to allow for the spread of the melting cheese.) Top with remaining tortillas and press gently to seal. Melt 1 tablespoon butter in a small skillet. Carefully place a quesadilla in the skillet and fry, turning once, until golden and little bubbles appear on both sides, about 4 to 5 minutes total. Repeat with the remaining quesadillas, wiping out the pan between batches if the butter burns, and adding more butter, as needed.





While the quesadillas cook make the salsa: Halve the tomatoes and grate them on the largest holes of a box grater into a bowl, discarding the skins. Grate the onion into the tomato, and stir in the cilantro, hot sauce, and salt, to taste.





Cut each quesadilla into 4 wedges with a pizza wheel or knife and serve with the salsa and avocado.What's a good inexpensive recipe for dinner, for five hungry eaters?
When I get like that, I just make a little casserole with Ramen noodles, chili (hot dog chili out the can), whole kernel corn, %26amp; if you have enough money, cheese. It's cheap but plentiful %26amp; yummy. It can feed the whole family.
The ultimate tight-budget food is Ramen noodles. Many people consider that good food. If you do than that's your solution. You can always throw some extra odds and ends into the soup to make it more interesting.
Chicken and Noodles.


Need: ! Chicken or 4 Large Chicken Breasts,


1 Large package of Egg Noodles,


2 cans Cream of Chicken or Cream of Mushroom soup,


1 rib celery diced small


frozen peas


Topping;


old potato chips or bread crumbs or sliced American Cheese





Cook the chicken anyway you like, debone and shred into bite size pieces. Cook the egg noodles according to package directions. Mix all the ingredients together except the topping and bake 20 min at 350 degrees. Remove from oven and add bread crumbs or several slices of cheese. Return to oven for 10 min to melt cheese or brown bread crumbs.


Serve with a loaf of hot french bread, and a big salad.

Hot Dogs, baked beans, rolls, cole slaw.
Get some frozen chicken breasts at Costco or something, and then preheat your oven, and take the breasts out.





Put them in the pan you plan to cook them in and put sour cream over them on both sides. Then put crushed up cheese nips on top of that.


Then cook them!

TACOZAGNA





1 pound hamburger


1 package taco seasoning


1 package flour tortillas


1 pound cheese shredded


1 can refried beans


lettuce


tomato


onion


sour cream





cook burger and drain, add 3/4 cup water and taco seasoning


in a 9by 13 baking dish layer flour tortillas, burger and cheese, keep repeating until pan is full





bake 35 minutes at 350 degrees





serve topped with lettuce, tomato,onions, refried beans, sour cream and salsa

CHICKEN CASSEROLE


1 pound chicken cooked and cubed


3 cans cream of chicken soup


3 cups pepperidge farms seasoned stuffing mix


8 ounces sour cream


1 package ritz crackers


1 stick butter





cook and cube chicken


in a 9 by 13 baking pan mix sour cream, soup, stuffing mix and chicken, spread evenly crush ritz crackers and sprinkle on top melt butter and pour over crackers





bake 45 minutes at 350 degrees





serve warm





PEPPERONI CHILI





1 pound hamburger cooked and drained


4 cans tomato sauce


4 cans kidney beans drained(2 light 2 dark)


pound of shredded cheese


1 pound pepperoni sliced or cubed


1/3 cup onion powder


1/3cup garlic powder


1/2 cup chili powder





cook burger and drain add sauce, beans, and pepperoni to the burger and mix in seasonings, add 1/2 pound of cheese and cook on medium for 2 hours


dip into bowls and sprinkle with remaining cheese
Pasta: (@$7.00)


1 Lb. elbow macaroni


1 Lb hamburger


1 Jar pasta sauce


1 can corn and green beans (drained)


1 loaf garlic bread





Meatloaf: (@$5.00)


1 lbs. hamburger


1 box Stove Top (any but cornbread)


Mix and bake at 350* for about 45 minutes. Top with ketchup. Serve with mashed potatoes and gravy

2 lbs. hamburger meat


2 boxes rice-a-roni


Cook hamburger, drain. Add rice-a-roni to skillet and cook according to package directions. Serve with rolls?
Any pasta dish is inexpensive. Spaghetti with meatsauce is a good choice.

1 jar or can of Spaghetti sauce ( you can get them on sale for $1)


Spaghetti Noodles.
Porcupine Balls





1 egg


½ cup water


1 envelope lipton onion soup mix


1 ½ lbs lean ground beef


½ - ¾ cup uncooked minute rice


1 – 46 oz bottle of Campbell Tomato Juice


1 tsp sugar





Beat egg slightly with water and 2 tbs soup mix. Mix lightly with beef and ¼ cup of rice. Shape into large meatballs (1 ½ to 2 inches). Roll in remaining rice, pressing it lightly into the meatball. Use more rice if needed.





Heat tomato juice to boiling. Stir in remaining onion soup mix and sugar. Place meatballs in sauce and cover. Simmer, stirring several times for 50 minutes.





Serving suggestions: Great with a vegetable or salad and rolls.











Moms Sweet %26amp; Sour Meatloaf





Sauce:


2 small cans tomato sauce


1/4 cup worchestershire sauce


1/2 onion chopped


1 tablespoon dried parsley


1/2 cup brown sugar





Mix all sauce ingredients together in bowl, set aside.





Ingredients (Meatloaf):


2 pounds ground beef


1/2 chopped onion


1 egg, beaten


1/2 cup or more if needed, quick oatmeal (not instant)


1 teaspoon garlic salt





In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.





Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.








Chicken and Dumplings





1 whole chicken


1 bay leaf


2 tsp garlic salt


6 black peppercorns


6 cups of water


1 cup baby carrots


1 package refrigerator biscuits (10 – 12)





Place chicken in crock pot and add everything except carrots. Cook on low for about 8-10 hours. Remove chicken and de-bone. Pour broth into large pot on stove and heat until boiling. Add carrots and cook for 30 minutes. Thicken broth with cornstarch or flour mixed with cold water. Tear refrigerator biscuits into 3-4 pieces each and drop into boiling broth, lower heat and cover. Simmer for about 5 minutes, until biscuits puff up. Add chicken and carrots, stir, and serve.
boil 2x 500gram of pasta,a bottle of ready made tomato sauce with a bit of a chilli taste,pour over cooked pasta, mix together,top with a can of tuna,oil taken out,top over tuna with grated cheese,pop under grill till melted and serve,hmmm.
