im making this weeks grocery list and im tired of the same old stuff we eat for dinner. any help would be great. we prefer chicken and beef, and if it has cream of mushroom my boyfriend wont touch it. also, we like so many people, are on a tight budget so something with just a few ingredients would be great. thanx in advance!!!I need new recipes for dinner!?
This meal is so delicious, cheap, fast, easy, and super healthy. And don't worry if you don't know/ don't think you like clams, you will like this one:
Gourmet spaghetti with clam sauce
1 small onion, chopped
1 large clove garlic, chopped
olive oil/ butter (a little of both- just enough to coat onions/ garlic)
1 cup chicken stock
1/4 cup dry white wine (Pinot Grigio is my fave or Chardonnay)
1 can chopped clams IN JUICE (save clam meat for end only!)
2 tsps dried thyme
a pinch of oregano and basil
1 tsp lemon zest and a little squeeze lemon juice
2 tsp cornstarch
A little less than 1/2 box of spaghetti
Parmesan cheese
Begin cooking pasta according to directions. In the meantime saute onion and garlic in olive oil/butter until soft. Add clam liquid only, chicken broth, white wine, lemon zest/ juice, herbs and cornstarch and simmer 5-10 minutes. Season with salt and pepper to taste. Add clam meat at the end to simmer only for 1-2 minutes. Add pasta into the pan with the sauce (should be very saucy at this point) and simmer for 1 minute more. Add a generous helping of Parmesan cheese and serve.
serve with some of the wine used in the sauce and a nice salad with vinaigrette and you have one healthy mealI need new recipes for dinner!?
Pasta with chicken
1 pkg. of fresh linguine noodles
1lb. chicken
Sun-dried tomatoes- chopped
Capers (drained)
Fresh Basil/or dried
Mushrooms-chopped
Fresh Parmesan cheese
Balsamic Vinegar
Garlic %26amp; Herb seasonings
Butter
Extra Virgin Olive Oil
Sea salt %26amp; black pepper to taste
1. Pre-heat oven to 350.
2. Let the chicken brown on both sides in a cast iron pan with olive oil, Tablespoon of butter, and Garlic %26amp; Herb Seasoning.
3. Add balsamic vinegar, and place in oven for about 20-30 minutes.
4. While baking, chop mushrooms, basil, and sun dried tomatoes, and shred cheese.
5. Saut茅 mushrooms in butter and salt and pepper.
6. Set aside.
7. When chicken is done, cut into pieces and boil noodles.
8. Drain water when the noodles are done. ( Leave the noodles in the pot)
9. Add olive oil, salt and pepper. Mix well.
10. Then add the mushrooms, basil, chicken, sun dried tomatoes, and capers to the noodles.
11. Combine well.
12. Serve warm with dipping spices and French bread.
Pizza
1 pre-done pizza dough
1 ball of mozzarella
Package of pre-shredded mozzarella
1 bottle of pizza sauce
Bell peppers-chopped
Green onions-chopped
Sun-dried tomatoes-chopped
Pepperoni- sliced
Chicken-chopped
Broccoli- chopped
Mushrooms- sliced/chopped
Banana peppers
Fresh/dried basil
Basil pesto
Red pepper flakes
1. Pre-heat oven to 350.
2. Place dough on a pre-greased (a bit of olive oil) cookie sheet.
3. Spread evenly.
4. Top with a little drizzle of olive oil.
5. Poke holes and place in oven.
6. While in oven, chopped the meats, vegetables, cheeses.
7. Bake for about 6 -7 minutes or until lightly browned.
8. Place fresh ingredients as desire.
9. Place back into the oven for about 10-15 minutes.
this is pretty cheap and a favorite - especially when chicken is on sale
4 Boneless Skinless chicken breasts
1 bottle of italian dressing
2 box stove top stuffing ( generic is fine too )
1 8oz bag - shredded cheddar cheese
Make stuffing according to package directions - set aside
Place chicken breasts in casserole dish - season w/ salt pepper
pour 1/3 bottle of dressing over top of chicken
spoon stuffing mix evenly over chicken so its coated
top with all the cheese
and coat again with about 1/3 more of the dressing.
Bake uncovered for 1 hour at 350.

Honey Baked Chicken
1 (3 pound) whole chicken, cut into pieces
1/2 cup butter, melted
1/2 cup honey
1/4 cup prepared mustard
1 teaspoon salt
1 teaspoon curry powder
Preheat oven to 350 degrees F (175 degrees C).
Place chicken pieces in a shallow baking pan, skin side up. Combine the melted butter or margarine, honey, mustard, salt and curry powder and pour the mixture over the chicken. Bake in the preheated oven for 1 1/4 hours (75 minutes), basting every 15 minutes with pan drippings, until the chicken is nicely browned and tender and the juices run clear.

Lovely Lemon Chicken
1 (4 pound) whole chicken, cut into pieces
4 lemons, halved
6 cloves garlic, minced
1 tablespoon curry powder
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Place chicken pieces in a 9x13 inch baking dish. Squeeze lemon halves over the chicken, then sprinkle with the garlic, curry powder and salt and pepper to taste.
Bake at 350 degrees F (175 degrees C) for 1 hour or until chicken is cooked through and juices run clear.

Ground Beef 'n' Biscuits
1 1/2 pounds ground beef
1/2 cup chopped celery
1/2 cup chopped onion
2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon pepper
2 (8 ounce) cans tomato sauce
1 (10 ounce) package frozen peas
1 (7.5 ounce) package refrigerated buttermilk biscuits
1 cup shredded Cheddar cheese
In a large skillet over medium heat, cook the beef, celery and onion until meat is no longer pink and celery is tender; drain. Stir in the flour, salt, oregano and pepper until blended. Add tomato sauce and peas; simmer for 5 minutes.
Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Separate biscuits; arrange over beef mixture. Sprinkle with cheese. Bake, uncovered, at 350 degrees F for 20 minutes or until biscuits are golden and cheese is melted.

Baked Beefaroni
1 pound ground beef
2 cups shredded Cheddar cheese
2 (15 ounce) cans tomato sauce
2 tablespoons butter
1 (16 ounce) package uncooked elbow macaroni
salt and pepper to taste
Preheat the oven to 350 degrees F (175 degrees C).
Crumble the ground beef into a large skillet over medium-high heat. Cook, stirring frequently, until evenly browned. Drain.
While the ground beef is cooking, bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Drain, and stir in butter. Transfer to a large casserole dish, and mix in the ground beef, tomato sauce, and Cheddar cheese. Sprinkle a little salt and pepper over the top.
Bake uncovered for 30 minutes in the preheated oven, or until heated through and bubbly.
