I don't know where you live but look up 99cents stores or dollar tree stores they have tortillas, re fried beans, can corn, salsa, olives, cheese and sour cream all for a dollar.Favorite dinner menus and recipes that your kids (if any) enjoy?
Hi two cheap easy and healthy recipes I remember loving as a little child (and I was the fussiest eater) are;
1) Mini pizza's made with hi fibre pitta bread,fresh tomato sauce,vege selection(such as capscium,tomatoes,pineapple)(washed thoroughly) and cheese. Cut the pitta bread into fun shapes like stars and love hearts (kids love this) and lightly grill on one side then turn over spread sauce and top with toppings and then grill until cheese is bubbly.
WARNING:Tomato holds it's heat for quite some time after cooking so make sure it is only warm before serving to children
2) Wash thoroughly potato and pumpkin,remove skin,boil in water until very soft and mushy.Strain and add butter and mash together with a potato masher.Simple as that! Mum used to serve this to us on Disney plates which made it so fun!
This is only meant as a side dish,not a meal!
I have lots more but I hope this helps,I'm sure you know but just remember kids love to feel secure and familiar with everything even food so make meals fun and care free and add adventure to every meal by using colorful dishes for them to eat off,and maybe even food mats with pictures of their favourite cartoon's,teddy's,doll's,colours etc.
