I found a recipe in Everyday Food (from Martha Stewart) that sounds really delicious. It's called Turkey Meatloaf with Fontina and Mushrooms. I'm actually making it tonight. I know meatloaf doesn't sound too appetizing, but it's actually very good. Serve it with a side of green beans and mashed potatoes, if you like. And if you have leftovers, then you can make some meatloaf sandwiches the next night. MMMM!!!
Turkey Meatloaf:
2 Tbsp vegetable oil
1/2 lb. cremeni mushrooms, sliced
coarse salt and ground pepper
2 small leeks, white and light-green parts only, thinly sliced, washed, and dried thoroughly
2 garlic cloves, minced
1 cup shredded fontina cheese (4 oz)
1 slice day-old bread, cubed
1 large egg
1 Tbsp finely chopped fresh sage leves
1 1/2 lbs. ground turkey (93% lean)
1. Preheat oven to 350. In a large skillet, heat 1 tablespoon oil over medium-high. Working in batches, cook mshrooms, stirring once or twice, until deep golden brown, about 5 minutes per batch. Season with salt and pepper;transfer to a large mixing bowl.
2. Return skillet to medium and add 1 tablespoon oil. Add leeks and garlic and cook, stirring occasionally, until soft, about 4 minutes; season with salt and pepper. Add to bowl with mushrooms and let cool.
3. Add fontina, bread, egg, and sage to bowl and mix until thoroughly combined. Mis in turkye, 3/4 teaspoon salt, and 1/4 teaspoon pepper. On a parchment-lined rimmed baking sheet, use you hands to form turkey mizture into a 10 inch loaf. Bake until cooked through, about 45 minutes. Let rest 10 minutes before serving.
My fave: easy and inexpensive....
Chicken Fajitas
2 tablespoons canola oil
3 boneless chicken breast halves, cut in thin strips
1 medium onion, cut in wedges
2 cloves garlic
4 mild green or red chile peppers, seeded and sliced
1 sweet red bell pepper, seeded and cut in strips
1 green bell pepper, seeded/cut in strips
1 zucchini, trimmed, cut in strips
8 flour tortilla, warmed
1/2 cup sour cream
guacamole
1 bunch green onions, trimmed, sliced
Heat the oil in a heavy skillet; cook the chicken strips over high heat, stirring constantly, for 5 minutes, or until cooked. Drain and serve.
Add the onion, garlic and chile peppers to the oil in the pan and saut茅 over high heat for 2 minutes. Add the bell peppers and zucchini; cook over high heat for 4 minutes, or until the vegetables have begun to have a blackened look around the edges.
Return the chicken to the pan and heat until sizzling hot. Serve right away, with warm tortillas, sour cream, guacamole, sliced green onions, and chopped tomatoes. Serve with hot cooked rice and refried beans, if desired.
Serves 4.
