Leeks with Sunday dinner - oven recipe please?

Got some leeks to go with Roast Pork Sunday dinner. Ideally, I want to cook them in the oven which will be at gas mark 4-5. I've got an idea to braise them in some stock but how long do you reckon it would take to cook them if they are whole? No creamy recipes thanks as it won't go with the roast dinner.

This is how I like them





Braised Leeks


8 leeks


water, stock or a mixture


4 tablespoons butter


salt and pepper


fresh parsley, minced, for garnish





Directions:





You can add wine, herbs or cream (no cream in your case) to this recipe, when served as a side dish to roast meats.





PREHEAT OVEN TO 350F. Clean leeks. Without cutting entirely through the root, slit the leeks lengthwise to remove all of the dirt. Trim to a total length of about 8 inches (save the trimmings for stock). Place the leeks in a baking dish in 1 layer. Pour in enough water or stock to come about halfway up the leeks. Dot with butter and salt and pepper to taste. Set the baking dish over high heat on the stove top and bring to a boil. Cover and braise in oven for 30-to-40 minutes or until the whites of the leeks are tender. The cover may be left slightly open to evaporate some of the liquid. Sprinkle with butter or minced parsley and serve.Leeks with Sunday dinner - oven recipe please?
Do you have to keep them whole or can you chop them? I would slice them and cook them in butter on the hob with salt and pepper and serve them that way. They will cook quicker than in the oven anyway
If they are about 30mm in diameter I would braise for 20 minutes turning occasionally.


Adjust cooking times to suit baby leeks or fatter ones. Remove and cover if they look like they are going to over cook. (they can be brought up to temperature again as the meat rests)
I roast mine round the joint. I place the meat on a slightly raised roasting tin and place the leeks round the outside in the 'trough' and fill with water which I keep topped up. Saves the leeks getting a tough outer skin. Baste regularly. Dependent on the thickness the leeks will cook in either 30 mins or large ones within an hour.
Here is a great one, but sorry for the quantities in grams. It should be easy though to find the equivalent.





Leaks al gratin :


6 leaks


30 grams of butter


30 grs of flour


1/2 liter of whole milk


Gruy猫re cheese (found in any supermarket)


Salt, pepper and a touch or 2 of nutmeg





Boil the leaks for 10 minutes


On the side, put the butter and the flour in a pot and stir until homogeous. Add the milk in one pour and use a whisk to mix it all. Add salt, pepper and a touch of nutmeg. Then, on medium heat continuously stir with a wooden spoon until thick.


In abutterd oven dish, pour a little of the sauce, lay the leaks that you would have drained very well, and pour the rest of the sauce all over. Top it all with shredded gruy猫reand put in the oven (340掳) until the sauce is boiling and the cheese golden.





You can do this with big macaroni (same processus exactly) or with belgium endive wrapped in regular ham, it's excellent

My mum cuts them into slices about half an inch thick then lays them into a shallow dish, then she puts knobs of butter all around and sprinkles mixed herbs and chopped garlic all over, cover in foil and put it in the oven.
