From Brazil, where I grew up.





Salt Cod Fritters


1 pound salt cod


2 cups of mashed potatoes


2 tbsps of finely chopped parsley


2 large eggs


oil for frying





Soak salt cod overnight and during the morning, changing water three times. Drain, remove skin and any bones and cut in small chunks. The next step is poaching the cod. Simmer a small onion, thinly sliced, with a bay leaf and 4 peppercorns in 2 cups of water. After 5 minutes, add the cod and 2 cups of water. When it simmers, cover the pan and remove from heat, so the cod doesn't toughen. You can keep the cod in this liquid in the refrigerator until ready to use it.





To form the balls: drain the fish and flake it well into a bowl. Add 2 cups of mashed potatoes; beat two eggs with a pinch of salt and add them to the fish and potatoes. Some cooks like to separate the eggs, adding first the yolks, then the beaten whites. Add the parsley (and if you want, 1 small chopped onion), salt and freshly grated pepper to taste. Wait about 1/2 hour to form the balls; they should be about 1 1/2 inches. Use good, fresh oil for frying (set deep-fryer temperature at 375掳). Dry in paper towels.Very good with cold beer!





Baked Red Snaper


1 (decent size, please) red snapper, cleaned


juice of 2 limes


1/2 tsp of salt


1 tomato, chopped


1 medium onion, chopped


a handful of cilantro, chopped


Marinate the fish in the above ingredients.





For the stuffing:


1 cup manioca flour


1/2 onion chopped


10-12 black olives


1 Tbsp olive oil


1Tbsp Worcestershire sauce





Stuff the red snapper with the stuffing. Bake in 350掳F preheated oven for 20 minutes. Serve with white rice, or mashed potatoes and extra stuffing...

Swanson is one brand. Just open the can, heat the chicken a' la king, scoop it onto the toast. Mmm.
Cheesy Chicken Casserole





1 (4 - 5 lb.) chicken or 6 chicken breasts





2 10 oz. packages frozen broccoli





2 C. milk





1 (8oz.) package cream cheese





1 t. salt





3/4 t. garlic salt





1 C. grated Parmesan cheese





In a stockpot, cover chicken with water. Cook until tender. Drain and let cool. (save broth for another use) When cool remove bones and skin and discard. Chop meat and set aside.





Prepare broccoli according to package directions. Drain well and place in a 13 x 9 inch baking dish.





In the top of a double boiler, blend milk, cream cheese, salt and garlic salt. Stir in 3/4 C. Parmesan.





Pour 1/2 of the sauce over the broccoli. Add chicken and top with remaining broccoli. Pour remaining sauce over the top. Sprinkle with the Parmesan cheese.





Bake at 350掳F. for 45 minutes.
