What's a good recipe for dinner tonight (see details)?

I'm looking for pretty much anything. My boyfriend really likes Italian, but I don't want the basics...spagetti,etc. Any ideas?What's a good recipe for dinner tonight (see details)?
If you like chicken, this is a great one and my favourite. A really good friend first made this for us and what I loved about it was that she prepared it in the morning and then just let it sit in the oven until we were ready to eat. She had the rice already cooked too. It was served at room temperature so it was great that she didn't have to spend time in the kitchen while we were out in the garden. The ingredients sounds a bit strange, but believe me, the outcome was delicious!!





Chicken Marbella





2 chickens, 2 1/2 lbs each, quartered


1/2 head of garlic, peeled and finely pur茅ed


2 Tbsp dried oregano


Coarse salt and freshly ground pepper to taste


1/4 cup red wine vinegar


1/4 cup olive oil


1/2 cup pitted prunes


1/4 cup pitted Spanish green olives


1/4 cup capers with a bit of juice


3 bay leaves


1/2 cup brown sugar


1/2 cup white wine


2 Tbsp fresh Italian parsley or cilantro, finely chopped





So, you just basically combine the garlic, oregano, salt and pepper to taste, vinegar, olive oil, prunes olives, capers with caper juice, and bay leaves in a large bowl. Add the chicken pieces and coat completely with the marinade. Cover and let marinate, refrigerated, several hours or overnight. (I overnight it, making the recipe easier in that I do this part the day before.)





Then, the next day preheat oven to 350掳F and arrange chicken in a single layer in one or two large, shallow baking pans and spoon marinade over it evenly. Sprinkle chicken pieces with brown sugar and pour white wine around them. Then bake for 50 minutes to 1 hour, basting frequently with the pan juices. Chicken is done when thigh pieces, pricked with a fork at their thickest point, yield clear yellow juice (not pink). Then, take a slotted spoon and transfer chicken, prunes, olives, and capers to a serving platter. Add some of the pan juices and sprinkle generously with parsley or cilantro. Serve with rice, green salad and a fresh baguette and you have a great meal!.

Good for you cooking for someone is a very personal gift and he will adore you for it. As corny as it sounds the saying ';a way to a man's heart'; and stood the test of time but I think it works for women as well when my hubby cooks for me I feel very pampered. When making spaghetti don't overwhelm yourself, I used to make everything from scratch and discoveded with all the really good sauces on the market a little doctoring up and they are fantastic. Here is my basic recipe:





1 lbs ground beef


1 lbs bulk italian sausage or 1 package of italian sasage links


1 chopped onion


3 stalks chopped celery


1 bell pepper chopped


1 can or bottle prepared sauce


1 can diced tomatoes


1 can tomato paste if desired


italian seasoning to taste


salt to taste





Brown ground beef and sausage, (if using links sausages I bake them unitl they are browned and then slice them into 3/4 inch pieces and add at the end to simmer with the sauce), add veggies and cook until onions are opaque. Add sauce, (rinse out jar or can with about 1/2 cup hot water and add to sauce), and tomatoes. If the sauce is thin looking or tasting add 1/2 to 1 small can tomato sauce. Season to taste. Simmer for at least 30 mins this is quick sauce that freezes well so don't be alarmed about the quantity. I put it in serving size containers in the freezer to I have a quick dinner anytime.





This sauce is a base for lots of italian dishes. Top speghetti, and serve with salad, top browned chicken breasts with sauce and a slice or shredded mozzerella and bake until brown and bubbly. I have used this sauce for pizza lots we spread pizza crust, homemade or store bought, with sauce top with cheese add what ever toppings you want just remember you already have meat and veggies so sometimes we don't add anything on top.

Veal Picatta is good...there are tons of recipes on the internet. Or you could do something a little more simple but nice like...manicotti. It's pasta shells filled with a mixture of ricotta cheese and fresh basil - topped with either marinara or alfredo sauce. To keep it simple you could buy the refrigerated sauce and just prepare the pasta yourself. Buy the shells at the grocery store...find the recipe on the internet. You basically prepare the shells, prepare the cheese/basil mixture, stuff the shells and bake them.

Manicotti is wonderful!
Have you considered making manicotti? Big noodles, stuffed with 4 kinds of cheeses (I know mozzerella and provelone, but forgot the other 2)!! Top with marinara sauce, and sprinkle with a little bit of pamisian cheese. Yummy!!
How about raviolis, nokis or risotto? You can also have antipasto, and for dessert canoli or tiramisu.
Deep Fried Tofu with Mushroom Sauce





Ingredients:





2 blocks firm tofu


*potato starch/flour for dusting tofu.


1 1/2 cup dashi soup stock


5 tbsps soysauce


4 tbsps mirin


3 tbsp potatostarch/cornstarch and 3 tbsps water


4 shiitake mushrooms


1/2 carrot


1/2 small onion


1 enoki mushroom


*vegetable oil for frying.


How to Cook:





Wrap tofu with paper towel and place it on a cutting board.





Put another cutting board or a plate on top the tofu to remove liquid from tofu.


Cut shiitake mushrooms, carrot, and onion in thin and short strips.


Cut enoki mushroom into 2-inch length.


Saute carrot and onion in a pan.


Add shiitake and enoki mushrooms in the pan and saute together.


Put dashi soup stock, soy sauce, and mirin in the pan and bring to a boil.


When the sauce boils, add starch and water mixture in the pan and stir quickly.


Stop the heat.


Dry drained tofu with paper towels and cut each tofu into 4 pieces.


Dust tofu with potatostarch/flour thinly.


Heat oil in a deep frying pan.


Fry tofu in 350 F oil until it turns brown.


Serve fried tofu pieces in a plate and pour mushroom sauce over them.
Here's a very simple recipe. It's sort of italian and it doesn't involve pasta.





Spread some bottled pesto over a salmon fillet. Place it on the tray that comes with the toaster oven and pop it in the toaster oven and broil it until the salmon is done.





Christopher Ranch makes a good bottled pesto. And be sure to pull out the little bones from the fillet with tweezers before putting a nice thick layer of pesto on the fillet.





If you want to get really fancy and you only have salmon steaks, you can roll the steaks up into medallions and put a thick layer of pesto on top.





Here are the steps to medallions. Remove the backbone and little pinbones from the center, but not cutting through the skin. Now that you have what looks like a horseshoe shape, cut between the skin and flesh on each of the two legs at the bottom for about an inch or two. Roll the salmon meat of the legs in toward the center. Then use the loose flaps of skin to secure the outside edge of meat by flapping them over at the open bottom. Tie it with some kitchen twine (made of cotton) and then dump on a nice thick layer of pesto. Pop in the toaster oven on your toaster oven pan until done. Then cut of the string and peel away the skin.





Ta-dah! Instant fancy dinner. A few steamed baby carrots and steamed baby yellow squash or baby zucchini and you're an instant gourmet chef.
try making risotto and serve bread, soup and wine. Afterwards, don't forget to make tiramisu! yummy!
