Boyfriend is coming over this weekend for a nice comfy relaxing dinner w/wine and a movie. He cooks way better than me and I want to impress him somehow! What could I make? He likes rice, italian, chinese, steak, shrimp, pretty much everything! Any simple recipes that you've tried that come out real good? I need some ideas!!:)Need a quick dinner recipe to impress the boyfriend!?
Here are a couple of ideas:
Menu I:
Colossal Prawns in cocktail sauce with lemon
Teriyaki Salmon
Jasmine Rice
Sauteed spinach with garlic
Lemon Bars
Champagne or Pinot Grigio
Menu II:
Bruschetta with sundried tomato and artichokes
Linguini with Pesto and Shrimp
Warm rustic french bread with butter
Cucumber and lettuce salad with shaved parmesan
Tiramisu
Prosecco, or Blanc de Blanc, or Sangeovese
Menu III:
Chopped salad with fresh pears, crumbled gorgonzola cheese, candied walnuts, and champagne vinagrette with baby lettuces
Grilled ribeye steaks with sauteed mushrooms in cabernet
Fingerling potatos with butter, chopped green onion, and sourcream
Apple Crisp with vanilla bean ice cream
Merlot, Sangeovese, Champagne
Recipes:
Teriyaki Salmon: get two meaty filets (about 1 1/2 inch thick if possible) with the skin on one side. Season with kosher salt and fresh ground pepper. Brush with your favorite teriyaki sauce. Place in 375 degree oven, skin side down, for 5 minutes, brush with sauce and return to oven. Continue baking for another 10 minutes. Brush with additional sauce and check for doneness. Fish should flake easily.
Rice: Instead of water in the rice, use a combination of chicken broth and pineapple juice. When rice is cooke thru, add chopped green onion and chopped pecans.
Sauteed Spinach: 2 bags of baby spinach, 2 cloves garlic, minced, olive oil. Heat olive oil in skillet until it shimmers. Add minced garlic and heat briefly. Add 1/2 bag of spinach and stir until wilted. Add remaining spinach 1/2 bag at a time until spinach is wilted. Season with 1 T rice wine vinegar, 1 tsp kosher salt, 1/2 tsp red pepper flakes.
Toss and season to taste.
Cucumber and lettuce salad: 1 English cucumber, 1 head baby lettuce, 1/2 cup rice wine vinegar, 1 T sugar, 1 tsp dijon mustard,3 T chopped green onion, 3 T salad oil. Blend vinegar with sugar, mustard, chopped green onion and salad oil. Slice cucumber very thin and toss with dressing. Add torn lettuce and serve chilled.

Chicken Marsala Recipe
3T olive oil
3 small summer squash, cut in one inch pieces
1 pt grape tomato's
6 t minced garlic
1/2 t each salt and pepper
2 lbs chicken tenders
1/4 C flour
4 T butter
1 eight ounce package mushrooms sliced
1/2 C chopped shallots
1 C Marsala Wine
Heat 1 1/2 T oil add squash and cook until lightly browned. Add tomato's, 3t garlic and 1/4 t salt and pepper. Heat tomatoes through and then put in a side dish and keep warm.
Salt and pepper the chicken with remaining salt and pepper and coat with flour. Fry in remaining olive oil until cooked through. Remove chicken and add mushrooms, saute until tender, stir in shallots and remaining garlic, saute until soft. Add the wine and reduce until half, add butter and plate up to your hearts desire. I made mashed potatoes but it would go well with egg noodles or rice. Whatever your preference.
I found this recipe easy, quick and simple to make and with very little effort. With my busy lifestyle easy, quick and simple is the only way to go.

This looks harder than it is -
Chicken Italianio
3 lbs chicken breasts, cut up
3-6 tbsp salad oil
12 garlic cloves
1/2 cup dry white wine
2 tsp salt
1/2 tsp pepper
1/2 tsp dried rosemary leaves
1 medium-sized onion, sliced
4 medium-sized tomatoes, cute into wedges
1 8 oz pkg spaghetti
In 12-inch skillet over medium-high heat, in hot salad oil, cook chicken and garlic until golden brown on all sides, about 20-25 minutes. When done, add wine, salt, pepper, rosemary, onion and half the tomato wedges; over high heat, heat to boiling. Reduce heat to low; cover and simmer 15 minutes or until chicken is fork-tender. Skim fat from liquid in skillet (if there is any). Add remaining tomatoes; heat through. While this is simmering, prepare spaghetti as label direct.
To serve, drain spaghetti; place on large platter. Spoon chicken mixture on top of spaghetti.
Or
Smear pork chops with spicy mustard, flour them, brown them in a pan with oil, then transfer to an oven-proof pan/casserole, pour a can of Cream of Mushroom soup over the top and bake for 25-35 minutes. Serve with a salad, rice and a vegetable.
Pasta primavera w/ salad
Chop up veggies (squash, zucchini, tomatoes, carrots, broccoli, peas)
Put diced onion (1) in large pan-- add veggies
Add 8 oz. of mushrooms
Add 1-2 cans of alfredo sauce-- or -- half red sauce and half alfredo
Make fettucine or other favorite pasta
Mix pasta and sauce in a bowl
Make a fresh salad
Ta Da-- simple fresh Italian dinner
*You can also add chicken if you want.
Here's what I do. It's impressive and so simple. You need to buy 2 boneless chicken breasts, some Italian bread crumbs, Italian cheese crumbles, pasta and alfredo sauce.
Preheat the oven to 350. While that is heating, pound your chicken a little flat. Slice it open and stuff the Italian cheese crumbles inside.
Get out 3 bowls. In the first bowl you need white flour. In the second bowl, whisk an egg. In the third bowl, pour your bread crumbs. Coat your chicken in that order--flour (helps the egg stick), egg (helps the bread crumbs stick), bread crumbs. Place in a baking dish and bake about 45 minutes or until the internal temperature of the chicken is about 170 degrees.
While that is cooking, boil your pasta and then mix in alfredo sauce. Serve chicken on a bed of pasta.
Ingredients
2 tenderloin steaks, 6 to 8 ounces each and no more than 1 1/2 inches thick
Kosher salt
1 tablespoon cracked peppercorns
2 tsp salted butter
1/2 teaspoon olive oil
2 tbs Cognac, plus 1 teaspoon
1/2 cup heavy cream
Remove the steaks from the refrigerator for at least 30 minutes and up to 1 hour prior to cooking. Sprinkle all sides with salt.
Spread the peppercorns evenly onto a plate. Press the fillets, on both sides, into the pepper until it coats the surface. Set aside.
In a medium skillet over medium heat, melt the butter and olive oil. As soon as the butter and oil begin to turn golden and smoke, gently place the steaks in the pan. For medium-rare, cook for 4 minutes on each side. Once done, remove the steaks to a plate, tent with foil and set aside. Pour off the excess fat but do not wipe or scrape the pan clean.
Off of the heat, add Cognac to the pan and carefully ignite the alcohol with a long match or firestick. Gently shake pan until the flames die. Return the pan to medium heat and add the cream. Bring the mixture to a boil and whisk until the sauce coats the back of a spoon, approximately 5 to 6 minutes. Add the teaspoon of Cognac and season, to taste, with salt. Add the steaks back to the pan, spoon the sauce over, and serve

for an appetizer, or snack while you guys watch a movie, you can try a cheeseball with ritz crackers. recipes below.
b-b-q ribs:
boil water, put ribs in the pot, boil for 30 mins. use a knife to cut a piece of the meat to make sure there is no red meat anymore. take out baking pan. turn oven onto bake 375 degrees. place bbq ribs on pan, spread bbq sauce over the ribs, rub with a cooking brush or regular spoon. leave in oven for 10 mins. take it out. its done.
chef salad:
-chopped lettuce
-diced ham
-shredded cheese
-any other ingredients you want in the salad
lipton noodles package
-just follow the directions and your good to go.
cheese ball
-3 packages of cream cheese
-2 jars of dried beef (found by the spam section), chop it up.
-green onions, chopped thin
-garlic salt
-worcshire sauce (don't know how to spell it)
-Accent seasoning
get a big bowl, put cream cheese in a mush it up. put the dried beef in the bowl (leave a little bit out of the bowl. you will need some later.) put in green onions. put about 3 or 4 drops of worchs. sauce in bowl. put about 2 tablespoons of accent into bowl. add some garlic salt. not too much, but enough to smell the garlic. mix it will together. taste it, make sure it isn't boring tasting, if it is then add more worsh. and garlic. if its good tasting then don't add anything. now form it into a ball. then roll it over the remaining dried beef. your done. put it on a plate with crackers.
You can't go wrong with steak, baked potatoes and salad. All are very easy to make. Find out how he likes his steak, get butter and sour cream and a great salad dressing. Don't forget the candles.
Spaghetti %26amp; meat-sauce is pretty safe %26amp; simple, with wine.
